2019 Vintage, patiently waiting in the cellar, evolving in the bottle. The gentlest of presses, to use the most delicate and expressive must. It is the result of a blend of 40+ year-old Cabernet Sauvignon & 20+ year-old Merlot.

Balsamic, concentrated, and mature. Aged in old barrels. The nature of the Mediterranean, unadulterated.

Tasting note

Unique, but not unrepeatable. This 2021 vintage, the first one, is like The Doors: John Densmore keeps the rhythm with his jazz background, Robby Krieger improvises melodies on his guitar, and Morrison recites the lyrics at will.

This Xarel·lo—planted in 1945 by Valentí Valls, my partner’s grandfather—was harvested in September. It fermented spontaneously; partly with skins and partly more rounded.

“We couldn’t get much higher.” Savory, ripe fruit, salinity, and herbaceousness. Pure. No makeup.
